I have a confession to make…
Even though I know how bad sugar is for my body, I love chocolate pudding. I’d go so far as to say it’s probably my #1 diet-downfall.
In fact, just yesterday morning – in a moment of weakness – I picked up one of those 4-packs of pre-made pudding cups on my way to work. As I was finishing off the last cup, my assistant Sarah walked in on me and caught me red-handed.
Now…Sarah is a HUGE health nut, and she knows how serious I am about nutrition (and avoiding sugar in particular), so she called me out on it right away.
She reminded me how bad they were for me…but then she told me if I really wanted some chocolate pudding, she had a recipe that would knock my socks off.
And, she added, “You can eat a whole bowl of it without feeling guilty.”
The next morning she showed up with a small bag of groceries, told me to wait in my office while she whipped it up in the kitchen and let it refrigerate. 30 minutes later I walked out and saw this on the counter…
I took a bite…and it was absolutely delicious.
It wasn’t until I was nearly finished with the whole thing that she told me about the surprising main ingredient: Avocado!
I was blown away by how simple and how healthy the whole recipe was.
There are only 4 ingredients in the whole thing – avocado, honey, cocoa, and almond milk – and every single one is incredibly healthy for you…
The avocado provides you with a huge dose of omegas, and can also reduce inflammation throughout your body.
The honey & cocoa powder are both full of antioxidants, and the almond milk will help lower your cholesterol.
Add these ingredients together, and you have a dessert that’s as healthy as it is delicious!
Using avocado in a dessert may sound weird…but I promise you won’t even notice. It tastes exactly like your favorite chocolate pudding without all the sugar.
- 2 Ripe Avocados
- ¼ cup Local Honey
- ¼ cup unsweetened cocoa powder
- ½ cup of unsweetened Almond Milk
1) Cut your avocado into large pieces and toss them into a blender or food processor.
2) Add the honey, cocoa powder and half of the almond milk into the blender.
3) Turn on your blender, slowly adding the remaining almond milk until the mixture is smooth.
If it’s a little thin, don’t worry – it will thicken up in the fridge!
Refrigerate for at least an hour, sit back, and enjoy this guilt-free delicacy!
